District Cross Country

I'm watching Masterchef master class with the kids who are counting how many times they say caramelised ... we're currently at four ... and my feet have finally dried out after standing for an hour in the sopping grass marshalling for the district cross country. I'm just grateful it wasn't raining or windy.

I did get some time off to watch The Little Girl. I think she finished about 40th out of 80. Her best friend finished 26th which were both fantastic efforts considering you've got the best 10 kids from each school.

Apple Cider Prok

Another slow-cooker recipe, I'm trying to build up my repertoire because we have so many nights out at the moment. This was really yummy and I made extra which we had the next night in rolls. I added potatoes and carrots when I added the apples 3hrs before cooking was finished.

The Boy and Sports

The Boy had his cross country last Friday. He ended up finishing mid-pack. It looks like as the distances get longer he will improve ... his extreme tininess(?) won't be such a factor.

That night we were having dinner and The Big Girl was complaining that some of the other schools only send their best players whereas her school give everyone a go so they get thrashed.

The Boy's opinion: It's good when they bring everyone because then those loser people get to have a go.

Yep, political correctness is the order of the day round here.

On my weekend ...

The weather continued being atrocious and the two youngest had soccer at 9am out at Berwick ... nice. Hubby got soccer duty. I supervised the Big Girl's tennis and model building. It's for a presentation at school on the Senate.

We've had a lot of fun discussing who is who. The greens are on the end ... they're green.

After showers for the kids who were all freezing cold and wet after their various sporting endeavours we headed up to Bellavedere for lunch. Yum, yum, yum. I had scampi and mushroom salad followed by roast duck in a red wine sauce. We also got a plate of duck fat chips ... and some veges and salad. Dessert was a selection of tiramisu, bread and butter pudding, fig and frangipani tart and a strawberry and goat's milk tart. I didn't have any dinner.

Hubby worked and I slacked off afterwards ... I really felt like having a lie down.

Sunday we had church, then went to Shoppingtown to shop for the kids ... not fun. We had limited success. Home for lunch then out to the park for Little Girl to do some cross country training and then having a play.

Last weekend, pineapple fried rice and other things

I know, I'm slow, we are almost halfway through this weekend after all.

Anyway Saturday morning ... hubby and young ones go to soccer (7-0 loss which is an improvement on the previous week)
I take Big Girl to tennis lessons.
Afternoon has hubby working, me ironing while helping The Boy with his poster for the science competition and the girls doing ... I have no idea.
Hubby home late afternoon just in time to help stick the poster together.

Inspired by my trip to Singapore and my first ever pineapple fried rice. The dish was a success and no I did not carve out the pineapple to serve it in.

Home to make two salads to take to lunch with hubby's family.
Get to lunch, find out Hubby didn't tell me it is also BYO meat.
Eat. Talk. Get Full.
Go home.
Play bejewelled for 4 hours with Hubby providing pancakes for dinner.

Monday the girls had their cross country. This one came 5th. She'll be heading off to districts in a couple of weeks.

The Big Girl has made the districts the last two years but wasn't keen this year. Ended 15th so missed out. Let's just say there wasn't a lot of disappointment for her.

I also had a lovely night out at Dr Zhivago on Wednesday. It's good to get out and do something different for a change although the weather driving was awful. It took me an hour to get to the city and find a park near mum and dad's.

Science Projects

While I was away in Singapore Hubby promised The Boy I would help him with his science kit ... which meant from the time I came home he started pestering me. We finally found a quiet moment when the girls were at camp. He was pretty proud of his slimy creations ... unfortunately he left them at his cousins place.

Moroccan Chicken

Wednesdays are a little crazy round here. I pick The Boy up from school at 3:15pm then rush to the girls school by 3:35pm. Big Girl has swimming from 4-5, The Boy has piano from 4:10-4:30. The The Boy has swimming 5:30-6pm, Big Girl has diving 5:30-6:15pm and Little Girl has swimming 6-7pm. Needless to say there is no time in the afternoon for cooking. Hubby was interstate yesterday but luckily a friends dad bought Little girl home from swimming and I put the dinner on in the morning using my slow cooker, which really does make life easier.

This is a recipe I made up myself inspired by this chicken tagine recipe.

Ingredients:

1tbs oil
2 onions chopped
2 cloves garlic minced
1kg chicken thighs
1tsp paprika
1tsp turmeric
2tsp ground coriander seeds
1tbs ground cummin
1/2 cup chicken stock
1 lemon sliced
handful of green olives
1/4 cup flaked almond
1 cup frozen peas

Method:

Mix spices together, toss chicken in half spice mix.

Heat oil in pan. (My slow cooker has an inset pan that can go on the stove so I do it all in this). Cook onions and garlic 2min, add rest of spices cook until onions are soft. Add chicken and brown all over.

Put into slow cooker. Add stock, lemons, almonds and olives. I used slivered almond this time, it's just what I happened to have in the pantry. Cook on low for 6hrs.

The Boy had forgotten his bathers and Big Girl her towel yesterday so I gave Big Girl, Little girl's towel and we dropped home after The Boy's piano lesson. While I was home I decided to throw some carrots in the dish so I didn't need to make an extra side dish of veges. You can really do whatever you feel like.

When I got home from swimming I threw in the thawed, frozen peas and made some cous cous to go with it. Dinner on the table 10 mins after we walk in the door is not too bad.

The rest of the family don't like the lemon in this dish but I love it, so I make them pick it out ... I am the cook after all.

Display only and fake identities

The Boy brought this model house he made home from school yesterday. He immediately rushed looking for a piece of paper to make a sign ... you know ... just in case anyone got confused and thought it was real.

Speaking of fantasies, last night I was chatting with some friends and it turned out I was the only one who had never used a fake name when they were out in public. I kind of forgot about it until I this morning when I was perusing some blogs and stumbled upon Maxabella's post about The Liary and I started to wonder ... am I the odd one not to have a fake identity? Maybe I should have a fake identity?

The US album is finished

I had a discount code for blurb books that expired on the 4th of April so at the end of last month/early this month I was crazily trying to get our US album finsihed ... and I did!!. I nervously sent it off to get printed hoping it was OK and got it it the mail 10 days later. Can't believe the fast service as it came from the US and the quality is fabulous. Love it!!
