cellophane noodle salad with roast pork

It was quite warm here yesterday so I was wracking my brain trying to come up with something different to have for dinner that was also summery when I stumbled across the recipe for this salad.

It was easy to make although probably had a few more ingredients and steps than normal for a weeknight meal. I added a little brown sugar to the dressing because I felt like it needed a little bit of sweetness for balance. I also used a pork fillet and overcooked the noodles. Hubby liked it in spite of the noodles and I just served up the kids without the dressing and they gobbled it all up.
